Monitor a file which updates every few seconds

I have a fairly simple request but I can't seem to figure out the logic.

A log file is updated every few seconds but if it hasn't been updated in over 5 mins then issue an alert.

I have tried File Integrity and file age in the dirscan probe. They both alert prematurely because the FileTimeStamp isn't being updated, but the file is when we open it.

I was thinking that I should be using the logmon probe but I'm not sure what to check for. If I should regex the timestamp, what should it look like?

Sample lines from log file -

11:25:05 INFO [AssemblyLines/sync_internal_users_al] - CTGDIS079I AssemblyLine AssemblyLines/sync_internal_users_al terminated successfully.
11:25:10 INFO [AssemblyLines/sync_external_users_al] - CTGDIS079I AssemblyLine AssemblyLines/sync_external_users_al terminated successfully.
11:26:05 INFO [AssemblyLines/sync_internal_users_al] - CTGDIS079I AssemblyLine AssemblyLines/sync_internal_users_al terminated successfully.
11:26:09 INFO [AssemblyLines/sync_external_users_al] - CTGDIS079I AssemblyLine AssemblyLines/sync_external_users_al terminated successfully.

Any help would be greatly appreciated.
