Is there anything that I can use/configure to log changes to probe configurations please at an individual probe level?
Have you looked at the audit probe? It is designed to track changes like that, but you should make sure it tracks all of the information you need.
As Keith mention the audit probe does this you must turn it on at the robot level as it's not turned on by default the
audit = 6 flag in the config file will do this.
Also configs are stored in the <nimroot>\robot\cfgs folder

I tried to read up on the audit probe but I am still uncertain, I would really appreciate if some one could explain a one things to me.
Is it advisable to record configuration changes on all robots in a domain from with one single audit probe or would it be better to deploy an audit probe on each hub?
I believe the audit probe writes to the NiS database, in which case it would have be deployed to the SLM hub (running the data_engine) or possibly another robot with access to the database. If you have more than one of those in your environment, it probably makes sense to run it on each.
