How can I activate and change the mail from where notifications come from
I will have to assume this question is for Service Desk since you did not specify.
On the Administration tab, expand the Options Manager folder and select the Email folder. In that folder you will find options such as:
Good Morning John Jairo Sierra Garcia.
With the given answer, I assume this question is raised for CA Service Desk Manager? Is this correct?
Or do you need information on this for CA Service Catalog?

You can do this from the Email folder under Options Manager. Please see the following link for all the details:
If you do need to change the From Address for Service Catalog notifications, you can do it in Administration > Configuration > Mail Server
