Is there any probe in the UIM for the IPMI monitoring case ??

There isn't an out of the box probe specifically for IPMI monitoring in CA UIM but , CA ecoMeter for UIM Probe should be able to help you here with IPMI monitoring up to some extent

The CA ecoMeter is already in EOL for May 1, 2018; Then will the CA support end, in this way how would it be possible to maintain IPMI monitoring ?? Is there any other CA tool that allows IPMI monitoring?

Not sure of any other existing tools but there seems to be an idea already open on this and its set to Currently Planned . Not sure when was the status updated by the PM , may be something is in road map

Also I see its the CA ecoMeter component which works with CA eHealth as a backend seems to be EOL as of  May 1, 2018 and not the CA ecoMeter probe for UIM ,so you might still be able to use it
