Is there a way to customize the new ux with some customized fields that have been created?

Not in 15.2. May be coming in future release - look for previews on 15.3 as it is supposed to be released, soon. CA has been saying more New UX functionality would be coming with each release.
We have a highly customized environment. This is a current limitation is keeping us from even looking at the new UI.
