Hi. Our business are looking at ways to measure task actual time spent vs task estimates. Currently there does not appear a way to disable changes to the estimates after, say, the sprint begins. We want the team to only be able to set time in another field. 

Can anyone advise?

Currently we don't have the Time Tracking module so if that may assist in this process, please do mention it.

Currently there are no methods to lock these fields. One method of tracking the time spent working on the items is to display the Actuals field if you haven't already. The team would then enter the actual amount of time they worked here, and leave the estimate alone. Then during a retrospective or whatever you can discuss if it took more or less work than estimated. You could also do an export of the sprint from the Iteration Status page when it begins so you have a copy of unaltered estimates to use as need later.
