How do I determine the credentials used by the AE server. I want to use the "Attach file from AutomationEngine" in my notification object. I am using a UNC path and am receiving an 'Access is denied.' message because of security.

Thats the user who starts the CP an Wp binaries of your AE.
If you use the service manager have a look at your win services for the user (usually local system account).
there is a trick - you can do a net use before to connect a local network drive of your server e.g in a win job.
dont forget to disconnect it afterwards :-)
