Is it possible to change the Administrator password that was used when installing the UIM environment? If not can it be disabled from allowing people to use it to log into the IM console?

You can change the administrator password from IM ->user administration
Please create some addtional users with superuser /Administrator acl and ensure these work before changing the administrator password as backup
