How to change Dropdown selections in Serviuce Desk operators

When I go to use the PAM Service Desk operator to change a status of a Change Order, I notice I am limited to the options displayed within the dropdown box. I tried to specify a different status (one not displayed in the dropdown) by surrounding it in quotes, but the operator fails. Am I going to have to somehow change the dropdown list to include the desired status that I'm trying to change the Change Order to, and if so, how do I change the dropdown list?
