As Bhavin mentioned you can select "XML Data Protocol" in the request side and do not select any data protocol in the response as "Web Services (SOAP)" option is not available on the response side while creating the Virtual Model. And this will make sure that your response is recorded/populated as SOAP message. There is a way to add the "Web Services (SOAP)" data protocol during the playback mode. You can select the Publish node and add a new filter: Virtual Service Environment -> Data Protocol Filter and select "Web Services (SOAP)".
